My biggest struggle has always been trying to figure out what to eat for breakfast. Being allergic to eggs (I know, crazy right!? but I literally will end up in the ER), dairy and some gluten, I have a really hard time finding breakfast food that doesn’t contain those ingredients. I’ve had this issue since I was born up until about 5 years old, it went away and started coming back in my college years. It has been a struggle eliminating foods that I love from my diet and trying to find a substitute that tastes good. I’ll be honest, I cheat and definitely pay for it later with a throbbing stomach ache, I’m still trying to figure out if it’s worth it? But, with breakfast being the start of the day, I definitely don’t want to go the rest of my day in pain so I try to really stick to the gluten free/dairy free life!

These Gluten Free Energy Bites have become my favorite go-to breakfast. The recipe calls for essential ingredients to kick start your day and it’s so easy to make. I usually have two in the morning and it fills me up until lunch time!

Each batch usually makes 18-20 bites, which is perfect if you have two people in your home.

Recipe:

  • ⅔ cup creamy peanut butter
  • ½ cup semi-sweet chocolate chips
  • 1 cup gluten free Quaker Oats
  • ½ cup ground flax seeds
  • 2 tablespoons honey

Roll up in balls, about an inch in diameter and put in the fridge for 30 minutes before eating.
